Our Final Stop

Hi everyone and happy hump day! We are halfway through another week. It seems like time has been moving so quickly lately. I hope you all enjoyed your weekend and are loving all the fall activities. Since covid is still around, I know things are different this year, but don't get bummed! Pumpkin patches are open and delicious thanksgiving meals will still be made! November is such a colorful, beautiful month spent with family and friends. The temperature is for sure dropping in Little Rock. This means I get to bring out the sweaters and turn on my fireplace while drinking some hot tea, which makes me very happy! Continuing my final post of our 2020 vacation...
Fort Collins, CO was our last stop on our road-trip. Just so everyone is aware, which I wasn't before I was in Colorado, Fort Collins is NOT an Army base haha! I hear the word "Fort" in front of something and automatically assume we are talking about Army bases. Fort Collins is a cute town about an hour north of Denver. On our way there, we went through the Rocky Mountain National Park. We both loved it! We saw some amazing views as we moved up the mountains. I would have loved to stay there overnight for about a week to hike all the different trails. We did go up the trail that took us to the highest point. We were at 12,350 ft and could "see" Wyoming. When we talked to one of the park rangers, he told us that we are very lucky to have come on such a beautiful, clear day because they had been having issues with fires around the park that would leave the sky super hazy. On our way back down the mountains, we came across elk in the trees and stopped for a picture. They were beautiful! Aero's little barks showed how much she liked them too haha. We made it out of the National Park and drove through this super unique mountain town called Estes Park. We were driving along when Daniel starts yelling "ELK, get the camera". Sure enough, huge elk were just walking around the town like they were visiting the shops and people. It was so cool to see them just hanging out. I was able to snap a couple of not so great pics, but it was something haha, I'll post them below!
We made it to Fort Collins to see our friends that we hadn't seen since the beginning of the year. We were all so happy to reunite! That night for dinner, we went to Suehiro Japanese restaurant and had some tasty sushi. I love spicy food, so I ordered the roulette roll which has one piece of the roll spiked extra hot. They had 3 levels of hot and I went with level 2. Each of us picked out which piece we thought would be the spicy one. I ended up picking the right one and boyyyy was it spicy haha, but so delicious! I
drank about 5 cups of water after that, but I did it! The next day, we woke up and went to brunch at The Farmhouse at Jessup Farm. I had the breakfast sandwich, with no meat of course, and it was great! This is our friends' favorite place for brunch and we definitely recommend it if you make your way up to Fort Collins. We also shared some of their chocolate donuts because... why not? haha (so good)
As we were visiting shops downtown, we noticed ash falling from the sky. Apparently the fires had started back up again. We were glad we went to the national park the day before. The fires in Colorado have been really bad this year and I feel so bad for the animals and people losing their homes. That afternoon/evening, we went over to our friend's brothers house for dinner. We visited everyone and ate some great homemade food. It was a very chill final night in Colorado. Ten days is a long time on the road! We were sad to leave the next morning, but we were also ready to be back home.
Colorado was our big trip for the year and we enjoyed it so much! We can't wait to go back and would love to hear any recommendations you have on places you have been, trails you have walked and restaurants you been to.
